Foodcreation – Lasagna

Vegan and Gluten-Free

Today is my <strong>happy</strong> <strong>day</strong> because when I came home from work my boyfriend already cooked for us. One of his favorite meals is <strong>lasagna</strong> and I was used to prepare lasagna for him. Now it’s time to just appreciate this wonderful <strong>prepared dinner</strong>. And I could adapt to come home and the food has already been finished.  And because of the fact that the lasagna was so good it need’s to be shared here.

Ingredients

<ul> <li>gluten-free lasagna noodles</li> <li>1 bottle of pasta sauce</li> <li> 3 garlic cloves</li> <li> 1 red onion</li> <li> 1 Cup beans</li> <li> 2 tomatoes</li> <li> 1 handful kale</li> <li> 1 Cup Mushrooms, sliced</li> <li> 1 red pepper</li> <li> 1 handful spinach</li> <li> Seasoning like pepper, salt, thyme, chili</li> <li> vegan cream cheese</li> <li> Bazil Cheese Sauce</li> </ul>

Preheat oven to 400F. Stir-fry the onion and gralic. Add the rest of the veggies. After 10 mintues add the sauce and the seasoning. Boil the lasagna noodles for 5 minutes and rinse them with cold water. Layer the veggie filling and the noodles. We prefer putting pasta sauce on the bottom. The last layer should be noodles and on top of that sprinkle also Bazil Cheese Sauce. (Basil Cheese Sauce: 1 cup raw cashews (soaked in water for 1 hour), 1 garlic clove, lemon juice, 1 tbsp mustard, 1/4 cup water, 1 1/2 basil leaves, 1/2 cup nutritional yeast, salt, pepper and blend it up) Cover the baking dish with tinfoil and bake for 40 minutes. After removing the foil bake it for 15 minutes more.

The best thing about this <strong>vegan and gluten- free</strong> lasagna is that you can keep it in the fridge between 3-4 days. We love to heat it on the second day in a pan as a <strong>crispy version</strong>. And as you probably know rehashed food gets more intense on the second day.
