Foodcreation – Nut Corners aka. Nut Wedges

My every year <strong>birthday present</strong> for myself is baking a big plate of <strong>nut wedge</strong>s. It is my absolute favorite birthday cake. Due to the fact that it’s my boyfriends’ birthday today there could be no better idea than making a delicious German Birthday Cake. The original recipe is from my mum and I just converted it into a <strong>vegan and gluten-free</strong> version.

Dough Ingredients:

<ul> <li>2 Cups All Purpose Gluten-Free Flour</li> <li>2/3 Cup Starch (I used Tapioa Starch)</li> <li>1 tbs Baking Powder</li> <li>1/4 Cup Brown Sugar</li> <li>2 tablespoon Vanilla Extract</li> <li>2 Flaxseed or Chiaseed Eggs</li> <li>1/2 Cup Vegan Butter (I used Earth Balance)</li> </ul>

Topping Ingredients:

<ul> <li>1/2 Cup Jam ( I used selfmade blueberry chia jam)</li> <li>1 Cup Butter</li> <li>1 Cup Brown Sugar</li> <li>5 TSP Maple Syrup</li> <li>2 TSP Vanilla Extract</li> <li>6 TSP Water</li> <li>2 Cups Grounded Hazelnuts</li> <li>Dark Chocolate (I used my <a href=”https://energizedmotion.wordpress.com/2015/01/26/self-made-vegan-chocolate-love/”>self-made chocolate</a>)</li> </ul>

Preparation:

<ul> <li> Mix the ingredients for the dough together and place the dough on a greased baking plate</li> <li> Spread the jam all over the dough</li> <li> Melt butter, maple syrup, vanilla extract and sugar for the topping afterwards stir in hazelnuts and water</li> <li> Evenly spread the mass on the dough</li> <li>Bake it 45 Minutes with 350 F</li> <li>Leave it cool</li> <li>Cut it into big squares first and then into triangles/wedges</li> <li>Garnish the corners with yummi chocolate.</li> </ul>
